Spinach and Artichoke Dip = YUMMY!



I can't tell you the number of times I head out to a restaurant and end up getting Spinach and Artichoke dip as my starter.  After making it over the weekend, I now can enjoy it anytime and in the comfort of my own home.  This recipe only took 15-20 mins to prepare and another 20 mins to bake.  It was so simple, and leaves no reason to not make this more often.  Perfect for entertaining guests or for a night in watching movies with your boyfriend. For sure to leave everyone impressed you made this yourself!

Ingredients:
10 ounce package of frozen spinach, thawed and drained
1/2 cup red bell pepper, diced
1 tablespoon of minced garlic
6.5 ounce jar of artichoke hearts, drained and mashed
1/2 cup sour cream
1/2 cup grated Parmesan cheese
1/4 cup of heavy cream
salt and pepper to taste

Directions:
1. Pre heat oven to 350 degrees F
2. Mix together spinach, bell pepper, garlic, artichokes, sour cream and parmesan cheese.
3. Season with salt and pepper. (Mixture will be thick) Add cream.
4. Spoon into baking dish.
5. Bake for 20 mins, or until bubbly.
6. Serve with crackers, nacho chips, veggies etc. and enjoy.
