Mmm Mmm Mmm... Curry

After returning from Barbados I have been obsessed with Curry, and when I say obsessed I mean I will curry ANYTHING!  My recent go-to is Chicken and Veggie Curry over rice, so yummy and extremely easy to make.  Who doesn't want to get full from something super healthy and majorly tasty at the same time?  All you need is Olive Oil, Rice, Curry Paste, Chopped Tomatoes, Onion, Chicken, and Vegetables.  Check out my quick and easy recipe below which makes 2 servings, so perfect for date night or to have left overs for lunch the next day.





1) Measure out 2 TBSP of Oil Olive, 4 TBSP of Patak's Mild Curry Paste, 200ml of Chopped Tomatoes, 1 Medium Onion, and 1 package Miracle Rice.











 

2) Thickly chop your Vegetables. For me Zuccini, Snow Peas, Mushrooms, Red and Orange Peppers.



 






 

3) Remove the excess fat and cube 2 Chicken Breasts.






 






4) Sautee Olive Oil and Onions over medium heat until Onions are transparent.



 







 
5) Mix in Curry Paste and Chicken.  Cover, cook, and stir occasionally for 3 mins until Chicken is seared on all sides.


 



6) Mix in Chopped Tomatoes.  Cover, cook, and occasionally stir for 10 mins.







 





7) Add whatever vegetables you want.  Cover, cook, and stir occasionally for another 10 mins.







8) Plate, add any Hot Sauce needed, and enjoy!  Don't forget to let it cool, it will be extremely hot!
