Tortilla-less Chicken Enchiladas

This is comfort food at its finest, and especially on a cool Fall evening! I had left over Enchilada Sauce and couldn't let it go to waist, so off to Pinterest I went to get some inspiration. First thing that obviously popped up was Chicken Enchiladas, however you know I try to avoid carbs so why not just scrap the tortillas entirely. To add that extra filling I took literally whatever veggies I had in my fridge chopped them up and threw them in. Just thinking about it now and looking at the picture below is making me want to remake this dish. So delicious. So easy to make. Ingredients and Directions, as well for my homemade Enchilada Sauce, are below.


Ingredients:
1. Chicken Breast - 3 Shredded
2. Enchilada Sauce (Ingredients and Directions HERE)
3. Cheese - Shredded
4. Green Onion - 1/2 Chopped
5. White Onion - 1 Chopped
6. Red Pepper - 1/2 Chopped
7. Yellow Pepper - 1/2 Chopped
8. Jalapeno - 1/4 Finely Chopped
9. Garlic - 3 Cloves Pressed
10. Salt and Pepper - To Taste
11. Olive Oil - 1 Tbsp

Directions:
1. Pre-heat oven to 450 degrees and bake Chicken Breasts for 20 minutes. Season Chicken with Salt and Pepper to taste.
 2. While Chicken is baking, place Olive Oil in a frying pan to cook White Onion, Red Pepper, Yellow Pepper, Garlic, and Jalapeno. Season with Salt and Pepper to taste and cook until soft, approximately 8-10 minutes.
3. Remove from Chicken from oven, let sit, and then shred.
4. In a baking dish place shredded Chicken at the bottom, layering Onion, Peppers, Garlic, and Jalapeno on top, then spoon Enchilada Sauce over top (ensuring all Chicken and Veggies are covered with sauce), top with shredded Cheese and chopped Green Onion.
5. Put the baking dish in the oven until Enchilada Sauce has warmed and Cheese has melted, approximately 5-10 minutes.
6. Remove from oven and let cool for a couple of minutes. Then serve and ENJOY!

Kate Blushes Out At Tiffany

Kate Hudson walked the Tiffany Blue Carpet at the reopening of the Tiffany & Co. store in Beverly Hills on October 13th wearing this IN-CRED-IBLE head-to-toe blush ensemble, I mean those silk, high-waisted, wide-leg pants are just to die for! The "How To Lose A Guy In Ten Days" starlet completed her look with dramatic plunging neck blouse, full-length top coat, sparkly box clutch, simple sandals, diamond necklace, bracelet, and ring, tasselled hair, sultry smokey eye, and nude lip. There literally is nothing about this look I would change.

Fall Layering On The Red Carpet 👍

Katy Perry toned down her usual over-the-top style at the "Staples for Students" Winners VIP Celebration in LA on October 13th, wearing a cocktail dress with rose-gold bodice layered over a long-sleeved turtle neck bodysut with burgundy pumps, drop earrings, and multiple rings. Hair and Make-Up were also toned down with super straight blow out, subtle kohl lined eyes, and natural "your lips but better" glossed lip.

Mini Review - Elabloom

Elie Saab - #PFW Spring 2017


"It's about dancing - the disco, the seventies! I lived through those years and remember my parents then. I Think I took a lot from that decade through them," Elie Saab said, as he loosely twined a thick golden ribbon around Mayowa Nicholas's neck backstage. And in this collection he did, indeed, process many of the tropes of that decade - and then Saab-ified them, hard. Deeply Halston-esque silk gowns in rainbow striped or primary colors made a few cameos. There were also pleated skirts and necklines that plunged as low as Nixon's post-Watergate approval ratings. The '80s leg-of-mutton box was dutifully ticked. Saab contemporized his output a little by teaming some full-tilt sequined gowns with matching sequined baseball caps - and some starry ones too. And the black bomber jackets with split arms and golden ringlet details were sleekly pratique. Christian Dior - #PFW Spring 2017

"The excitement surrounding Maria Grazia Chiuri's debut at Christian Dior was palpable - the first woman ever to take charge as creative director of this storied house, which for so long has stood for "femininity" in the psyche of French culture. But what does "femininity" mean in today's world? Chiuri is a grown-up professional, who comes from long experience at Valentino, and is ready to put forward her own synthesis of what modern femininity can look like. "The message, really, is that there is not one kind of woman," she said. What emerged wasn't a predictable chocolate-box repackaging of ladylike house codes, but a refreshingly widened viewpoint, inclusive of the sporty and the fragile. The balance between the two led to a whole series of relatable, simple, practical pieces aimed at drawing in a new audience. [However] there were plenty of things, which were pure Maria Grazie in this collection - her talent with a lacy blouse and beautifully embroidered tulle dresses and skirts, for example. Chanel - #PFW Spring 2017

 "This is technology. But with the lingerie, it's intimate technology!" Karl Lagerfeld's description of Chanel's spring show was typical of him - a mad linguistic paradox. Today's fashion isn't linear anymore. That much is for sure. We're in an era when everything can happen, all at the same time. And that's how it was here - in a big way. It included everything from tweeds twinkling with crystal and plastic and vibrant silk prints to pretty frothy chiffon sundresses, medallion necklaces, and a whole palette of summery colors. Balmain - #PFW Spring 2017


"Rousteing was backstage, talking up this turning point before today's show and taking aim at his critics. "The Balmain Army has shed its armor," he said. "Whatever I do, even if I cover up my girls, people can say it's vulgar. But this is what it is. I think it's really chic, really French. It's Paris how I see it." But that doesn't mean this was a minimal collection. The excesses were just of a different sort. There were cut-outs on bodices that revealed a good bit of underboob, fashion's new erogenous zone. Slits extended way up the front of both thighs. And provocatively placed sheer bits drew the eyes to the hips and derrière. This is still plenty body-conscious. But in place of glitzy embroideries Rousteing let color do the talking. There were also a lot of knits. For evening, he proposed long split-seam dresses pavéd with multicolor crystals in Art Deco motifs and slinky chain mail dresses à la Versace.
